Pizza

Going gluten free is hard. I am learning to adjust. I found gluten free pancakes at Trader Joes that are yummy for breakfast. Bobs red mill rice ceral that is good alos. I know it is better to make all your food from scratch but I can't find the time. I home school my 2 boys. I run them all over town. I am having a hard time finding time to cook everything. Cereal is easy and quick. But it looks like God has other plans.

I made shrimp scampi this week. I used Trader Joes Rice sticks for the pasta. I was surprised. The noodles were very good.


My favorite food in the whole world is pizza. If I was stranded on a desert island and could only have one thing that is what it would be. I was in tears when I thought about not eating it any more. But goood news bobs red mill make a GF pizza crust mix. I added a few spice to the mix and it was pretty good. Even my kids ate it.

Gluten Free

After a reasent bought with 7 days of stomach pain, I decided to look in to it further. I started doing to research on the internet. I discovered all my syptoms pointed toward Celiac Disease. Which is basically the inability to digest gluten.

That begs the questions what can I eat? What about eating out?

Today I tried Trader Joes Guten Free Dariy Free forzen pan cakes. They were very yummy! Just like the real thing. I also had a banana and coffee.

For lunch I went to Whole Food look for more food choices. They have a bakery and will make any sandwich on gluten free bread. They sandwich was good. The bread was a brown rice bread made by ener-g. It was dry and grainy.

I also went to Trader Joe's. The have a print out of 7 pages of Gluten free product that they carry.
